your post reminded me...
it probably isn't common knowledge, not least because it happened a while ago - but there actually has been a mobile (i.e. vehicle-in-motion) EME contact made!
Myself, Graham G8MBI (now F5VHX), and Dave G8KBV had a 144MHz mobile EME qso, as G8MBI/M, with Dave W5UN way back on April 20th, 1991, between 00 and 01 UTC. OK, one side of the qso wasn't mobile ;)
We were using a 4CX350 amp, into a 13el tonna strapped to two small masts mounted on a land rover roofrack. Vehicle speed during the qso was 45MPH, which we still claim as a moonbounce land-speed record... There are some pictures on Graham's website, some way down the page.
I don't think anyone's done it since, so it's probably unique? If I remember correctly, it did inspire someone (G4YRY?) to mount an EME system on a boat and make a /MM qso sometime shortly afterwards.
I suspect these days we'd immediately get arrested for attempting such endeavours :P
